<p style="text-align:justify;">Can you have too much of a good thing?  Without moderation, I&#8217;m afraid the answer is yes.  That&#8217;s why pancakes, bacon, waffles, and all sorts of breakfast treats aren&#8217;t served up each and every day here at BAH.  But the thing about moderation is that you do occasionally get to indulge.  Egg beaters, steel cut oatmeal, and fruit smoothies only get you so far.  And when we reach that point, where we can&#8217;t look at breakfast without going &#8220;blah&#8221;, it&#8217;s time to make a detour.</p>
<p style="text-align:justify;">Our most recent breakfast detour involved <a href="http://orangette.blogspot.com/2010/01/very-definition.html" target="_blank">Orangette&#8217;s Oatmeal Pancakes</a>.  Yes, we do already have an oatmeal pancake recipe floating around the place, but that is a South Beach recipe that is heavy on the egg whites and cottage cheese &#8211; which I don&#8217;t always have enough of to sacrifice to the South Beach Diet gods.  And if I squint my eyes really tight and pretend that I don&#8217;t see that there&#8217;s an entire stick of butter in this recipe, this one isn&#8217;t too diet wrecking every now and then.  Darn that stick of butter.  If it weren&#8217;t for it, I could have served up some lovely oven browned bacon to go with the pancakes.  But my sense of moderation told me to go with some Canadian Bacon instead.</p>
<p style="text-align:justify;"><strong>Orangette&#8217;s Oatmeal Pancakes</strong></p>
<p style="text-align:justify;"><em>Molly says these are adapted from the Inn at Fordhook Farm</em></p>
<p style="text-align:justify;">BAH Note:  The oats need to soak overnight in the buttermilk.<em> </em>So these pancakes are a planned indulgence.<em><br />
</em></p>
<ul style="text-align:justify;">
<li>2 cups rolled oats</li>
<li>2 cups buttermilk</li>
<li>1/2 cup all purpose flour</li>
<li>2 tablespoons sugar</li>
<li>1 teaspoon baking powder</li>
<li>1 teaspoon baking soda</li>
<li>1/2 teaspoon salt</li>
<li>2 eggs, lightly beaten</li>
<li>1 stick butter, melted</li>
</ul>
<p style="text-align:justify;">Stir together the oats and buttermilk in a medium bowl until well mixed.  Cover with plastic wrap and let sit overnight in the refrigerator.</p>
<p style="text-align:justify;">Remove the oat and buttermilk mixture from the refrigerator.  In a separate bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.</p>
<p style="text-align:justify;">Add the melted butter and beaten eggs to the oat and buttermilk mixture.  Stir well to combine.  Add in the flour mixture and stir just until blended into a thick batter.</p>
<p style="text-align:justify;">Heat a large nonstick frying pan over medium high heat.  Lightly grease the pan with vegetable oil and wipe out the excess.  When the pan is ready, ladle in 1/4 cup portions of the batter.  Cook the pancakes until the bottoms are nicely browned, the tops have bubbled, and the edges have set before flipping.  Cook the second side until browned.</p>

<p style="text-align:justify;">The Mistah has a tshirt that asks, &#8220;Got Biscuits?&#8221;  It was a souvenir from our trip to Nashville after he returned from his first deployment.  That was also right around the same time that we signed away thirty years of our life to M&amp;T Mortgage for a corner parcel off of Exit 51.  So between sampling a fraction of the many, many beverages available at <a href="http://www.beerknurd.com/stores/nashville" target="_blank">The Flying Saucer</a>, and the insanity that comes with signing on that dotted line, my memories of Nashville are jumbled.  I distinctly remember exactly four things:<span id="more-99"></span></p>
<p>Booking a hotel across the street from The Flying Saucer was either brilliant or foolish, depending on the time of day.</p>
<p>Nashville in June  can be mistaken for Baltimore in August (at least when we were there).</p>
<p>I can never hear <em>Roll On</em> by The Little Willies too many times.</p>
<p>The <a href="http://www.lovelesscafe.com/index.html" target="_blank">Loveless Cafe</a> has biscuits to die for.</p>
<p style="text-align:justify;">I&#8217;ve never been gifted in the biscuit making department.  I end up with dough that&#8217;s either too sticky or too dry and biscuits that are either too gummy or too dense.  But those biscuits at the Loveless?  Those biscuits were heaven on earth.  Light and fluffy, I&#8217;d swear the secret ingredient was an airy cloud folded into the dough.  They come to the table still warm from the kitchen and butter starts melting at the sight of them.  Those women in the Loveless kitchen know their biscuits.  Pair them up with some Loveless fried chicken or sawmill gravy and you&#8217;ve got some serious southern eats.</p>
<p style="text-align:justify;">Our life here in Charm City sees few biscuits.  Which is why when they do make an appearance, SFC gets very curious.  What sort of occasion could be on hand to warrant the risk of offending the biscuit gods?  I blame it on my sister.  She was visiting from Georgia with her kids.  Since I hardly ever see her, I didn&#8217;t want what little bit of time we had together to be eaten up by me standing in the kitchen.  So I outsourced a ham, mixed up a batch of <a href="http://pmf1852.wordpress.com/2009/08/17/hot-mess/" target="_blank">Deb&#8217;s Broccoli Slaw</a>, and dug into the recipe folder for a <a href="http://orangette.blogspot.com/2004/12/another-excuse-to-talk-biscuits.html" target="_blank">biscuit</a> that I hoped would not leave me shamed.  Because down in Georgia, they know good biscuits just as well as they do in Tennessee.</p>
<p style="text-align:justify;">Good old Molly at Orangette did not let me down.  When I read that she had paired these very same biscuits with ham and Honeycup Mustard, I knew it was a sign that I was destined for success because that&#8217;s exactly what we were having.  There was a moment of uncertainty when I had to work more flour into the too sticky dough.  I&#8217;d been down that road before and it usually didn&#8217;t end well.  But I pressed on and by the time my sister arrived there was a plate of nearly perfect biscuits to be devoured.  Between the three adults, we put away eight of them.  And the last two only survived because I had set them aside for later.</p>
<p style="text-align:justify;">So the next time The Mistah pulls out his &#8220;Got Biscuits?&#8221; tshirt, maybe I&#8217;ll mix up a batch of these&#8230;no special occasion necessary.</p>
<p style="text-align:justify;"><strong>Molly&#8217;s Sweet Potato Biscuits</strong></p>
<p style="text-align:justify;"><em>Orangette adaptation of Martha Stewart&#8217;s recipe</em></p>
<ul>
<li>1 3/4 cups all-purpose flour</li>
<li>2 tablespoons light-brown sugar</li>
<li>2 1/2 teaspoons baking powder</li>
<li>1 teaspoon salt</li>
<li>1/2 teaspoon baking soda</li>
<li>6 tablespoons chilled unsalted butter, cut into pieces</li>
<li>3/4 cup chilled sweet potato puree (peeled, boiled or steamed, and mashed/pureed sweet potatoes)</li>
<li>1/3 cup buttermilk</li>
</ul>
<p style="text-align:justify;">In a large bowl, whisk together flour, brown sugar, baking powder, salt, and baking soda. With a pastry blender or two knives, cut in chilled butter until mixture resembles coarse meal. Whisk together chilled sweet potato purée and buttermilk in a small bowl and stir that quickly into flour mixture until combined but not overmixed.</p>
<p style="text-align:justify;">Turn out dough onto a lightly floured surface and very gently knead a few times until dough comes together but is still slightly lumpy. If your dough is too sticky, work in up to 1/4 cup additional flour. Shape into a disk,and pat to an even 1-inch thickness. Flour a 2-inch biscuit cutter and cut out biscuits as close together as possible. Gather scraps together and repeat to cut out more biscuits.  Do not reuse scraps more than once.</p>
<p style="text-align:justify;">Preheat oven to 425 degrees, with rack on lower shelf.  Butter or spray an 8-inch cake pan and arrange biscuits snugly in the pan.  Brush biscuits with 1/2 tablespoon melted butter and bake for 20 to 24 minutes, until golden brown, rotating the pan once.</p>
<p style="text-align:justify;">Yield: 8 to 10 biscuits.</p>
