Cider Glazed Chicken

Since I seem to be all about le poulet why not post another chicken recipe?  I grabbed this one from The Kitchen Witch, who grabbed it from Cooking Light.  Why do I get the feeling that The Universe is trying to get me back together with Cooking Light?

There’s a story about this dish.  It involves Tivo.  I may have mentioned that I fought Tivo for the longest time.  And then once it came into my life, I couldn’t live without it.  I imagine people once felt the same way about electricity, cell phones, and Facebook.  Anyhow, the beauty of Tivo is that The Mistah and I get to keep up with our shows even if they don’t appeal to both tv viewing members of our household (I’m looking at you Wipeout).  And for those shows that we both enjoy, we can watch them together on our schedule, not the network’s.

So there I was, halfway through the latest episode of White Collar when The Mistah came through the door.  He saw that I had started watching it without him and was all sad faced.  In a moment of inspiration, I told him that he could start watching it from the beginning , I would fix dinner, and when he got to where I was in the show, we would finish watching it together.  Who says compromise is hard?

In the time it took him to reach the 29 minute mark, which through the magic of Tivo is less than 29 minutes since we are not held hostage by commercials, Cider Glazed Chicken was prepped, cooked, and plated.

Sadly, there is no photo documentation that this meal ever existed at BAH.  We were too busy finishing that episode of White Collar.  You’ll just have to mosey on over to TKW’s blog for the photo.

Cider Glazed Chicken

Based on The Kitchen Witch’s Adaptation of Cooking Light’s Recipe

  • 1 tablespoon butter
  • 4 boneless chicken breast cutlets
  • 1/4 teaspoon kosher salt
  • 1/2 cup apple cider
  • 1 teaspoon dijon mustard

Pat chicken cutlets dry and season with salt.  Melt butter in a large, nonstick frying pan over medium high heat. Add chicken to pan and cook 3 to 5 minutes per side or until cooked through.  Transfer the chicken to a plate and cover with foil to keep warm.

Add the apple cider and mustard to the pan, scraping up any bits off the bottom, and cook for 3 to 5 minutes or until reduced and syrupy.  Taste for seasoning and add salt and pepper as desired.

Return the chicken to the pan, coat with the sauce, and serve with rice, noodles, or mashed potatoes.

    1. Thanks for the link Jennifer. I’ll have to check those recipes out. This is a great weeknight dinner…quick, easy, and delicious. I wonder if I can find room in my freezer for some cider so that I don’t have to wait until the fall to enjoy this again.

    So funny I am a TVO holdout – I keep thinking if I get it I wuill watch to much TV…however when I miss a show I really wanted to see I am not to happy about it.
    Maybe it’s like when I was holding onto my Nicon film camera years ago…kept thinking it was better than that new digital thing lol!!!! Boy was I wrong!

    1. SB, there has been a spate of cider cooking in my kitchen lately. Makes me wish I had stocked up on more and put some in my freezer.

      I can say that Tivo has brought a lot of tv into my life….some worth watching, some not. I really need to show more self control.

    i love simple and fast dishes like this one. and the compromise? fantastic.

  3. We don’t have Tivo but our Netflix streaming has worked for us and against us! Love that you were willing to compromise! Sounds like in the end you had a wonderful evening!

    1. Kristin, I see Tivo as a blessing and a curse. It has certainly contributed to a lot of wasteful television viewing. But in this instance, it provided a perfect solution.

    1. Ali, the initial plan was for him to stop at the 29 minute mark and then when dinner was ready we would resume the show while enjoying Cider Glazed Chicken. It was serendipitous that I managed to knock out prep, cooking, and plating by the time he got to that mark…it was just meant to be.

  4. We love this recipe! It’s one of my go-to weeknight meals. So tasty and quick. The brown butter pecan rice Cooking Light pairs it with is really good too. I made it for my in-laws and they were super impressed 🙂

    1. Theresa, I could definitely see this going into heavy rotation at our house as well. See what I mean about the Universe trying to get me back together with Cooking Light? I even picked up the latest issue at the grocery store over the weekend but didn’t go so far as to buy it. Maybe next month.

  5. Mmmm, this sounds like a Nigella recipe I use for pork chops (which involves hard cider, mustard and cream–it’s divine). And that sounds like a lovely evening. I’m looking forward to one such time tonight–we’ve had guests for the past few nights, and tonight we’re finally back to just the 2 of us. The guests were fun . . . but I can’t wait to be ‘alone’ again. =) Dinner, a movie, snuggling on the couch . . . heaven!!

  6. I have yet to shell out the extra dough to get a Tivo kind of device. I’m afraid if I do, I’ll spend more time watching TV! That was a good idea rewatching the show while you cooked!
